Carmen Aboy Valldejuli, n�e Aboy Ferrer, was a member of one of Puerto Rico's most distinguished families. Her relatives included actor-director Jos� Ferrer and Monsita Ferrer, who was a well-known pianist and composer. Brought up in the old Spanish tradition, Mrs. Valldejuli did not have the opportunity to discover the joy of cooking in one's own kitchen until she met and married a gourmet, the late Luis F. Valldejuli. Curious about Puerto Rico's native cuisine, the Valldejulis researched and collected recipes together. Their efforts produced two other cookbooks available from Pelican, Cocina Criolla and Juntos en la Cocina.

Carmen Aboy Valldejuli expressed her hopes that, eventually, all readers may wend their way to Puerto Rico to sample these delicacies in the land of their origin. But, she was certain that the recipes in Puerto Rican Cookery would bring the flavor of the islands to your own table. Pelican also publishes the Spanish version of this book, Cocina Criolla, as well as the Spanish cookbook classic Juntos en la Cocina, written by Valldejuli and her husband, Luis F. Valldejuli. Valldejuli passed away in 2005.

I got this cookbook for Christmas and it's the 2nd book I have by this author. I'm Puerto Rican, and I've been cooking Puerto Rican food most of my life, but I wanted a cookbook that had different recipes than what my mom taught me.So for the good: the recipes are authentic, although not all of them are 100% relevant in my opinion.The bad: the recipes are hard to follow and the layout of them is very confusing.I understand the book was published a while ago (1970's I believe?), but it needs a serious update. I'm a cookbook collector, and it makes me so sad that both of my Puerto Rican cookbooks read more like a science experiment than a beautiful cookbook that showcases our food. This book needs a revamp and maybe a little editing of the recipes, they're not all necessary and quintessential to Puerto Rican cuisine (there is an entire section dedicated to pasta dishes! Come on.. the only pasta recipe that is required in a Puerto Rican cookbook is 'Ensalada de coditos' aka macaroni salad).There are basically no pictures of the meals in this book, so it might be a little challenging for a new person to make things from the book if they've never been exposed to Puerto Rican food. I do like that they have a Rum drinks section though! :)

First let me start off my saying, i recieved my book later than what others said. I recieved my cook books 6 days later than usual. Also this book is pretty solid. Im puerto rican by the way and these recipes are aunthentic. However, the booknis missing some recipes that i wanted to do which is why i purchased the book to find some of the recipes not there unfortunately :-( however, theres alot of good authentic recipes in here that are useful. You see, i was one of the unfortunate puerto ricans that didn't have my parent's to show me how to cook our native foods. So by purchasing this book, i have to say this did fill in those cracks and help me alot. The recipes and instructions aren't hard at all. They're actually very simple and easy to do and remember. Im happy with my purchase, but im still chasing down my favorite dishes that aren't in this book. All in all it was a good purchase. And i do recommend this nook for anybody. Its actually a great wedding gift to send our fellow women out there with. GET THIS BOOK! ITS AUTHENTIC!💋 Y BIEN PROVECHO!💋

First off the recipes are so on point to what my Puerto Rican Mother in law says. Second off, I accident clicked the buy with one click button and I totally missed the email when it was shipped ... what a pleasant surprise though! I absolutely love it :)

Nice purchase!... Item arrived as described, with ware and tear to the book sleeve. Well repaired by seller with scotch tape and extra plastic protection to hold sleeve together nicely. Pages in nice condition with no markings. Would say looks in new condition but can tell there is some age(minor yellowing)which was expected. All in all, description was accurate and, purchase as expected. Would purchase again.

Great cookbook. Everything in it is delicious. I find every recipe way to salty for my taste. That is the only thing I adjust.

Interesting cookbook. Lots of recipes that I will NEVER make because organ meats are not on my menu ever. Still, I'm not sorry I bought it. We are heading to the Caribbean on vacation and this cookbook lets me be more familiar with the foods typically eaten in the area.

Was recommended this book, and bought it then and there. I love it, my boyfriend is half Cuban, so these are recipes he grew up with.
